A new bar is opening in Auburn. Bloodhound will be opening in the building that was formerly the Olde Auburn Ale House.

After being in the business for approximately 12 years, Matt Poirier moved with his wife from California in July to open their first bar as owners. Poirier’s wife’s family has had many attendees at Auburn University, which was a major factor in the relocation. cThe involvement with the bar according to Poirier has become “pretty much a family affair.”
The location was chosen after hearing that the Ale House had been declining in business. Poirier contacted the owner and made an offer to purchase it. Many other locations downtown were looked at but this one became the winner.
Bloodhound, which got its name for the Southern connotation, will be looking to function as both a restaurant and a bar. Heading the culinary duties will be chef Chad Mueller. Mueller’s experience includes being the last executive chef at Yellowhammer and working at Maestro 2300.
Poirier is looking to make the menu a “straight forward American classic.” They’ll be serving meals such as homemade corndogs, meatloaf, chicken potpie and burgers. Bloodhound is hoping to stay local when they can for their food supplies. Local farmers, meat suppliers, etc. can expect to have Bloodhound seeking their services. Another food novelty Poirier is eager to have is homemade pork rinds. A late night menu will also be available until around 2 to 3 a.m.
After recently expanding the bar by six feet, Bloodhound will increase the previous number of beer taps from 13 to approximately 24. Poirier also has the liquor drinkers in mind. “The stocking of the bar is going to be heavy in the whiskeys, bourbons and scotches,” Poirier said. This will go with the classic cocktails Bloodhound will serve, such as the Old Fashioned, Mint Julep and the Manhattan.
When the evening strikes, the patrons of Bloodhound can expect to enjoy happy hour along with live music in the back. The two phased happy hour will attract an older crowd from possibly 4 to 7 p.m. and then a younger audience from 8 to 9 p.m. And whenever it gets too crowded or someone is looking for some fresh air, the outdoor patio will be open.
